    Overall, this is a thoughtful, interesting book that provides a reasonable introduction to canning and some recipes that are a little exciting than the old stand bys Since I know how to can, it doesn t bother me that the how to consists of 17 written steps The Ashley English canning book, in contrast, has photos for each step of the canning process Is it overkill to have photos about something that can be described in words Maybe But I was such a nervous novice, I took a couple classes before I felt confident canning in my home, and I definitely would not have been confident enough to just read some words Maybe I m a big pansy I like this book than I like most cookbooks I get from the library, but not than most of the canning books that I own I did make the dill pickle recipe from this book, but I altered the spice levels and we haven t actually eaten them yet, so I can t weigh in on the recipe Anyway, there are some delicious and interesting ideas in this book Much of the emphasis is on traditional water bath canning methods, so it s fairly accessible to the beginning canner There s a section for jellies, jams, marmalades, conserves, preserves, fruit sauces, fruit butters pickles, relishes, chutneys, ketchups, infused vinegars, and so on I would like to try all the ketchups, but we don t have a ...

    This books has lots of great information for preserving things in a luxurious manner meaning, most of the recipes are for fancier preserved goods, not just the basics There are at least 3 additional recipes that use each preserved food as well, plus some other suggestions in the text The preserving methods cover canning hot water bath and pressure , freezing, smoking, and salting, though canning makes up most of it.Safety is emphasized here, too, which is important.I must say that this is the first book I ve read that has made me seriously consider getting a pressure canner Frankly, they scare me Still, she makes it sound lots less scary, and also desirable.I was hoping to make a batch or 2 of something for holiday gifts, but probably won t get to it this eyar Still, I am also looking forward, very much, to making pickled asparagus next spring.Besides the recipes and safety info, it s a lovely book with pretty pictures I do wis...
